  Recipe Of POHA Ingredients: 1 cup thick Poha (flattened rice) 2 tablespoons vegetable oil 1 teaspoon mustard seeds 1 teaspoon cumin seeds 1/2 cup finely chopped onions 1-2 green chilies, chopped (adjust to your spice preference) 1/4 cup roasted peanuts 1/4 cup chopped fresh coriander leaves 1/2 teaspoon turmeric powder Salt to taste 1-2 tablespoons lemon juice (adjust to taste) Freshly grated coconut for garnish (optional) Instructions : Rinse the Poha under running water in a sieve or colander for a minute or two. Drain well and set aside. Let it sit for about 10 minutes to soften. Heat vegetable oil in a pan or skillet over medium heat. Add mustard seeds and cumin seeds. Let them splutter. Add chopped onions and green chilies. Sauté until the onions turn translucent.. Add the roasted peanuts and sauté for another minute. Now, add the turmeric powder and mix well. Once boiling, add the Maggi noodles and cook them for about 2-3 minutes until they are slightly soft. Stir occasionally. Drain the noodles and set them aside. In another pan, heat the cooking oil over medium heat. Add cumin seeds and let them splutter. Add the chopped onions and sauté until they become translucent. Add the chopped tomatoes and cook until they turn soft and the oil starts to separate.
